We’re back at it in the land of Smiles
Hello again from Chiang Mai, Thailand! In case you were wondering I did skip from Days 5-6 to Day 14. No worries, I really can count; I’ve just been busy working, eating, working, eating, exercising, etc….you get the point. Not too much to write home about.
Recently though, I’ve really been missing the little comforts of home, what I consider to be normal foods and cooking. For example, I miss my yoga mat like a child misses their blanket. The hands down, biggest packing mistake I made was not bringing my yoga mat. Therefore, for anyone who uses a yoga mat on a regular basis, listen to my words and BRING YOUR YOGA MAT! The extra clothes aren’t worth it.
I am lucky though. As far as “normal” foods go, there are a number of very tasty restaurants that serve American food…think the equivalent of how Thai food is interpreted in America. Even so, I miss cooking. Before we left I usually cooked breakfast, dinner and made fresh juice at some point during the day. All of this eating out makes me want a home cooked meal. I took a look at my cooking resources in our apartment and it comes down to a hot plate, pot, bowl, and a few utensils. It’s not much but I can still make protein pancakes with the provided cooking gear! All I need for these delicious pancakes is a bowl, spoon, hot plate and pan. These fluffy little gems are simple, fast, tasty and filling.
Here we go. I give you my Perfect Protein Pancakes!
- 2 mashed bananas
- 1/4 cup ground gluten free oats
- 1 cup blueberries
- 1 tsp cinnamon
- 1 tsp vanilla extract
- Start heating your skillet on medium heat
- Mash bananas
- Mix in everything else
- Grease your pan with coconut oil
- Let cook for about 2-3 minutes on each side or until golden
- Enjoy! They don’t even need syrup.
